Spinach, Bacon, Red Pepper Quiche

Last night we had breakfast for dinner which included this quiche, some stove top red potatoes, and pancakes and syrup. It was gooooood, in fact I'm fighting the urge to go cut a slice of this quiche for a mid morning snack. Anyway, here is the recipe:



For the crust:
1.5 cups whole wheat ritz crackers - crushed
1.5 cups saltine crackers - crushed
3 tbs melted butter

Mix ingredients together and the press onto the bottoms and sides of a pie dish.

For the filling:
1/3 cup shredded part skim mozzarella
6 eggs
1/4 cup milk
5 slices center cut bacon - cooked and crumbled
1/3 cup chopped fresh spinach
1/3 cup roasted red pepper - diced
1/4 cup diced onions
salt and pepper
a dash of garlic powder

Beat eggs then add all ingredients and mix well. Pour into pie crust and bake at 375 for 35-45 minutes or until firm. Slice and eat it plain or topped with your favorite salsa.
